When the spring blossoms give way to the summer blossoms such as linden, blackberry, rose, sunflower and many other plants blooming in the garden, our bee colonies work around the clock to enter and process the fine-aromatic nectar. At the end of summer, many trees such as linden, beech and oak begin to produce honeydew honey, which our bees also collect and thus give the summer honey a darker color and a slightly malty note.
